The Canyon Lake Area Chamber wanted to thank you from the bottom of our hearts. From the very beginning of our working relationship we knew we were in good hands with Cooking it up with the Carles. We appreciate your professionalism, honesty, and amazing cooking! Our awards banquet was a hit because of you in 2012.

Every little detail with the food was incredible—from the delectable hors d’oeuvres to the yummy dessert! The main entrées choices — pork loin stuffed with an apple, raison, and walnut stuffing and the always popular pasta bar —were awesome. Our guests were impressed by your culinary skills, and still rave about it today.

Ed and Tina, your experience in catering made things simple and easy for us. Your consistency was greatly appreciated. We look forward to Cooking it up with the Carles catering this years event again.

 I cooked it up with the Carles…we started with cooking classes at the CRRC rec…it was well received and lots of fun…I then hired them for my wedding (honest…my last!!!)…it was unbelievable…everyone thoroughly enjoyed it…the Carles served and cleaned everything up…I’ve recommended them to many with no disappointments…you will get a professional class act with the Carles…I was lucky enough to be their friend before their cooking adventure and am so proud to endorse them now.

I can't help but think of all the delicious dishes you have cooked, from pasta with the most flavorful homemade sauces to mouthwatering venison you never need a knife to cut…always with the perfect side dishes to complement your creations. I especially remember the couscous with zucchini and roasted tomatoes. You guys are absolutely amazing when you are in the kitchen. "What a comfy and very cozy home and kitchen you have! I tried the big class cooking school thing and it made me too nervous. This was perfect. My first course was an asparagus soup. Our main dish was Broiled Lamb with fresh oregano, garlic, olive oil and a splash of vinegar, a very aromatic dish.  I am actually not a lamb fan (there, I’ve said it) but this was very impressive indeed, the component parts of the dish working really well with each other! It was so very good. Thank you for teaching me how to cook something so good!"

"Not only does Ed Carle create the most delicious, succulent marinated chicken I've ever eaten in my life, he and Tina have a natural grace and ease in the kitchen that makes dining with them a real pleasure.  Tina is a wizard with unusual salads and has a gift for creating magic with basic ingredients. I've had more gourmet dinners in their kitchen than I can count, and always lose track of time I'm having so much fun.  They're always totally gracious...making you feel like you've been part of the family for years.  Their cooking is fantastic, as is their teamwork.
